Fair Trade Spicy Tomato and Bean Soup Recipe

Whether it's for a starter, lunch or light supper, our fair trade tomato and bean soup is the immune boosting winter warmer you're looking for - using Hot Chilli Pesto from Meru Herbs in Kenya. If you like your food spicy, add more Hot Chilli Pesto for more than just a hint of heat!

What You'll Need:

2 tins of chopped tomatoes
2 tins of red kidney beans, drained and rinsed
500ml chicken stock
2 garlic cloves, crushed
Juice of one large lemon
2 tablespoons of Meru Herbs Hot Chilli Pesto

How to Make:

- Put the tomatoes, beans and stock in a food processor (in batches in necessary) and pulse briefly until coarsely chopped but not smooth.
- Transfer into a saucepan and add the crushed garlic, lemon juice and hot chilli pesto and heat to just below boiling.
- Thin with boiling water if necessary. Season, then serve.

Please note, the Chilli Pesto is hot! Use less or more to suit your taste.
