Fair Trade Pepper-Topped Bruschetta Recipe


Bruschetta is a family favourite. Whether it's a tasty side plate or a mouth-watering starter, this simple recipe will bring all the buzz of the bistro to your kitchen table.


What You'll Need:

Half a red and yellow pepper, chopped (about 200g)
4 cloves of garlic, sliced
1 teaspoon of mixed herbs
1-2 teaspoons Meru Herbs Hot Chilli Pesto
200 ml Zaytoun olive oil
Grated zest of half a lemon

How to Make:

1. Add the peppers, garlic, herbs, lemon zest, chilli pesto and olive oil in a pan, making sure there is an even coating of olive oil.
2. Cook over a medium heat until oil sizzles, then on a low heat for an additional 20 minutes.
3. Leave to cool completely, then bottle in an airtight, sterilized jar.
4. To serve, top slices of toasted crusty bread. You can also add grilled courgettes, mushrooms, or other vegetables of your choice. 

Please note that our chilli pesto is hot - so add more or less to suit your personal tastes. After making, this topping will keep in the fridge for a week. It can even be used as a pizza topping if you want to mix it up. Enjoy!
