Basic cooking:
The key thing to remember with this Thai rice is that it needs very little water - the water level should be about 1cm above the rice - and that the rice should be added while the water is still cold. As a result it needs to be cooked for 15-20 min and should either be rinsed or fluffed afterwards.

To really bring out the flavour you can add things like coriander leaves to the water, or even cook it in a watery stock that would compliment the rest of the meal (like fish if serving with tuna). Lightly frying garlic and spring onion before adding rice and water to the same pan also gives an interesting dimension to the finished rice, while cooking it in coconut milk creates one of the most deliciously thick and creamy side dishes you'll ever taste!

All in all, our search for the correct way to cook Jasmine Rice has resulted in the revelation that there is no one way! It's not only a wonderful Fairtrade speciality product, it's also an incredibly versatile ingredient and we would love to hear how you cook yours.

Saphanfa Nawaboonniyom is a member of Green Net Co-operative in Thailand. He sells his crop on Fairtrade terms and since changing to organic farming methods, his rice yields have increased and the soil quality improved.

"Fairtrade allows the producer to live and doesn't take advantage of the consumer. Each should take care of each other. I hope that many people will turn back to producing organically and consumers will choose to buy organic and Fairtrade produce to support the farmers and reap the health benefits themselves."
