Basic cooking:
The key thing to remember with this Thai rice is that it needs very little water - the water level should be about 1cm above the rice - and that the rice should be added while the water is still cold. As a result it needs to be cooked for 15-20 min and should either be rinsed or fluffed afterwards.
To really bring out the flavour you can add things like coriander leaves to the water, or even cook it in a watery stock that would compliment the rest of the meal (like fish if serving with tuna). Lightly frying garlic and spring onion before adding rice and water to the same pan also gives an interesting dimension to the finished rice, while cooking it in coconut milk creates one of the most deliciously thick and creamy side dishes you'll ever taste!
