Some recent feedback with regards to the setting and crystallizaion of this Wild Blossom Honey has put our sourcing and quality team on an investigative trail and an interesting on at that. We have discovered the reason why our honey is setting.
It is due to the type of honey that we are packing. Harvested in the Valdicvia Lake Region of Chile, the honey is typically known as Ulmo or Elm. It is well known as a high quality, monofloral honey, meaning single origin. Whilst this honey is delicious and unique in flavor, it is also renowned to setting or more accurately returning to its natural more crystalline state.
We apologise for this issue that has troubled some of our loyal customers. Please be assured that we are working on resovling this issue as quickly as possible but don't be alarmed should your honey set. Simply store it in a warm place or stand the jar in warm water for a while.

Sonia Chicao and Celia Gonzales are two women beekeepers who sell through Traidcraft's Chilean honey supplier Apicoop. They jointly manage about 30 hives, as business partner, on Sonia's land. Both Sonia and Celia ahve been elected to the board of the co-op. They live in Calcurrupe, which is in the Lago Ranco general area.
